Modification of Eating Behavior of Toddlers in a Day Care Setting

Ruth Highberger

Ruth Highberger, Child and Family Studies, College of Home Economics, The University of Tennessee, Knoxville 37916

Linda Carothers

Harriett Cohn Mental Health Center, Clarksville, TN 37040

This exploratory study examined food intake of six 24- to 31-month-old children before and following changes in meal service in a community-sponsored day care center for low income children. A videotape of the director of the center modeling desired guidance was used in training the two paraprofessionals who ate with the children. A significant increase in the quantity of food (main course, milk, and dessert) consumed by the children was found following the training period and change in meal service.
